THE GASTRONOMIC PHILOSOPHY OF MATERIA

THE KITCHEN SPACE

Once, in the spaces now home to Materia, a family of neomelodic singers used to rehearse loudly—even with guests in the house.

This story is part of a place that has never stopped being lived in. Not a reconversion, but an evolution: architectural, human, cultural.

From the voices that once filled these rooms came the idea of communal tables—spaces for sharing, where the joy of being together is rediscovered. Materia | Spazio Cucina is, above all, a gesture of hospitality—like in Sicilian homes, where cooking is a way of caring.

Mentioned in the Michelin Guide since 2023 and awarded two hats by L’Espresso Guide in 2024, Materia is now a destination for those seeking authenticity, depth, and identity.

Each dish is a journey through the island: between tradition and a contemporary gaze.

Each preparation begins in dialogue with the land, the seasons, and the stories of those who grow, harvest, fish, and transform ingredients.

“Each dish is a story, each flavor a choice”

CHEF BIANCA CELANO

Bianca Celano leads Materia | Spazio Cucina, a project she embraced from the beginning, sharing its culinary philosophy.

She carefully selects each ingredient: small-scale excellence, local producers, and an ethic grounded in seasonality, respect, and quality.

She remains faithful to a key principle: never betray the ingredient. Everything is used – no waste. Peels, leaves, and cores become preserves, ferments, stocks.

No trends chased, only the ambition to truly nourish. Just like in Sicilian homes, where food is cooked with love, and always in abundance.

Her cuisine begins with a memory: a family table, lively, generous, and full of affection.

By her side, a young and passionate brigade brings Materia’s kitchen to life every day, sharing the same desire: to tell the story of Sicily – every day, in every dish.

A MENU AS A METAPHOR OF A LAND

Materia’s menu is never the same. It changes with the seasons, follows nature’s rhythms, and draws inspiration from both market stalls and memory. Our menu is divided into sections reflecting the various souls of our cuisine:
Vegetables & Territory, Fish Market, Butchery, Pastry, and Farm.

Each dish is born to tell the story of a moment in the year:
In autumn, barbecued pumpkin or eggs with tuma persa cheese and porcini mushrooms. In winter, ‘aggrassato’ ravioli reinterpret a classic of Sicilian home cooking. In spring, Ispica’s baby carrots take center stage, between sweetness and fire. In summer, the eggplant becomes both symbol and substance.

Even our bread tells this story: baked daily in-house with slow fermentation and selected flours. It’s not a side, it’s part of the experience, designed to elevate every flavor and welcome every bite.
